
Associazione Chianti is a Tuscan trattoria from Black Sheep Restaurants on Ship Street in Wan Chai, a small, candlelit room with red banquettes, a butcher's counter at the front and an all-Italian wine list led by Chianti.
The bistecca is the main event. Black Angus from Idaho ranches is dry-aged in-house, rubbed with Chianti aromatics and cooked on a custom Tuscan broiler. The 1kg bistecca alla fiorentina T-bone (HK$1,588) and 1kg costata bone-in ribeye are built for two; a 350g boneless costata (HK$798), a 450g bone-in striploin and a 250g filetto suit solo diners. Start with carne cruda or chicken liver crostini, and add simple sides such as beans, broccolini or potatoes. Fresh pasta, including hand-rolled pici and lasagna, fills out the menu.
It is a good date-night or small-group choice rather than a big-party venue. A chef's menu is available for the table, and the space can be booked for private events.
