
Aged and Butchered started in Jakarta as a steakhouse built around its own ageing programme, and the Bali branch brings the same approach to The Komu Hotel on Jalan Pantai Berawa, a short walk from Berawa beach. It is an evening-only dining room, open from 5pm, aimed at people who want a proper steak dinner in Canggu rather than a beach-club burger.
The menu is organised by cut and by ageing method, with dry-aged and wet-aged beef cooked over coffee wood, which gives the crust a light smoky edge. Steaks start at around Rp320,000 before tax and service, and larger sharing cuts are priced by weight, so check the board on the night for what is in the ageing cabinet.
It suits a date night or a small group who want to talk cuts and ageing with the staff. Book through the online reservation system, especially at weekends. The original Aged and Butchered is in Kuningan, Jakarta, and has its own listing.
