SALTLICK occupies the upper floor of KU DE TA on Jalan Kayu Aya, with big windows over Seminyak Beach. It is calmer and more grown-up than the beach club below, with low lighting, sharp service and a serious cocktail list.
Steaks are priced per 100g and cooked over wood. Beef is aged on site: the 31-day New York strip, T-bone and porterhouse come on the bone, and there is a 21-day tomahawk for the table. The 'unorthodox' section is worth a look, with the Kiwami Wagyu pillow and marbello steaks (MB9+), alongside grass-fed picanha and a 36 Degree South chateaubriand. Miyazaki A5 striploin sits at the top of the list.
Book a balcony seat for sunset and arrive early for a drink. It works best as a date-night or special-occasion dinner; a 300g strip with sides lands in upscale territory once tax and service are added.
