The Ranch is the steakhouse at The Ritz-Carlton, Koh Samui, in Bophut on the north of the island. The room has exposed brick, dark wood and high ceilings, and the Michelin Guide Thailand lists it as the island's steak option, with a wine list covering Old and New World producers.
The kitchen works with Australian beef, both grass-fed and wagyu, dry-aged and cooked on an outdoor grill before arriving at the table on a sizzling cast-iron plate. Rib eye and wagyu tenderloin are the cuts most often recommended. Pork, lamb and a short list of seafood, depending on the day's catch, cover those not eating beef, and wagyu carpaccio is a regular starter.
Best for an anniversary or a last-night dinner if you are staying on the northern coast. It is open Wednesday to Sunday from 6pm to 10pm and closed on Mondays and Tuesdays, so plan around those nights. The dress code is smart casual, and reservations go through the hotel.
