
SKIRT sits beside the marina at W Singapore – Sentosa Cove, with the open kitchen as the centrepiece of the room. The kitchen cooks on a Josper grill and binchotan, using charcoal, almond wood and hickory smoke to vary the flavour from dish to dish.
The restaurant buys whole carcasses from producers such as David Blackmore and Rohnes, so cuts rotate daily and bone-in steaks are dry-aged for 28 to 45 days. The signature 200g MB9+ skirt steak is S$88, steaks are generally priced from S$32 per 100g, and the top end includes A5 Omi wagyu. Dry-ageing extends to fish, notably the Aquna Murray cod, and the hickory-smoked Jeju pork belly and Iberico pluma are the non-beef choices.
Worth the trip across to Sentosa for a waterfront date or a celebration. Dinner is served nightly and lunch on Saturdays only. Diners spending S$50 or more receive complimentary parking, and the hotel runs a shuttle to VivoCity.
